Before I started doing the slow carb diet, I had the hardest time even thinking about what meals would be like without bread or pasta. It's been almost 4 months now that I have been on this diet regiment and I have no regrets! I understand some people do diets in order to obtain weight loss, but i'd like to make it clear that my purpose for doing this has been to change the way I view food and learn to balance my meals without making my blood sugars go crazy.
Anyways, it has been really fun getting to experiment with foods and learning what yummy meals I can make that won't make me feel the symptoms from having high blood sugar. Maybe i'm biased because I am a major foodie (hence going to school for nutritional science). So throughout the months, I have made many omelettes, burrito bowls, and salads, but I noticed I was craving pasta alot during the weeks. I was then introduced to 'Shirataki Noodles' and all I can say is that they are magical. Yup, MAGICAL!
So what are shirataki noodles? They are from Japan and the Japanese have been eating these noodles for many years. The noodles are made from a certain type of yam called the konjac plant. Which looks like this:
What are the benefits you can get from these noodles?
- Lowers cholesterol levels in the body
- Improvement of digestion due to its high fiber content
- Lowers blood sugar levels in the body <-- YES just what I was looking for!
- Improves intestinal function
- Strengthens bones due to its calcium content
I was so excited after learning about these noodles, that I went to the grocery store and picked up the noodles as well as pesto. So last week I enjoyed shirataki fettucini with pesto and bell peppers. To say it was good would be an understatement. I tasted NO difference from regular fettucini, but I felt much better afterwards because the noodles did not spike my blood sugar! Here is a picture below from my fun dinner experiment.
